Mexican Chicken Bowl

Ingredients

Burrito Bowl

  • 200g chicken breast, diced
  • 30g Taco seasoning
  • 1 tsp extra virgin olive oil
  • 1 packet pouch microwave rice
  • ½ red capsicum, diced
  • ½ can black beans, drained and rinsed

Chipotle Mayonnaise

  • ½ tsp Spice & Co. Ground Chipotle
  • ½ tbsp extra virgin olive oil
  • ½ cup mayonnaise
  • ½ tsp garlic powder
  • 2 tsp lime juice
  • ¼ tsp paprika
  • ¼ tsp black pepper

Method

 

 

  1. Marinate the chicken breast with the taco seasoning and rub until evenly coated.
  2. Heat a large fry pan, add the olive oil and cook the chicken breast for 2 ½ minutes each side or until tender.
  3. Add in red capsicum and black beans and sauté for 3 minutes. Set aside.
  4. Microwave rice as per instructions.
  5. Combine all chipotle mayonnaise ingredients in a small bowl.
  • To serve, place the rice in two bowls. Slice the chicken diagonally, then top with chipotle mayonnaise. Garnish with coriander and
