Mexican Chicken Bowl

Ingredients
Burrito Bowl
- 200g chicken breast, diced
- 30g Taco seasoning
- 1 tsp extra virgin olive oil
- 1 packet pouch microwave rice
- ½ red capsicum, diced
- ½ can black beans, drained and rinsed
Chipotle Mayonnaise
- ½ tsp Spice & Co. Ground Chipotle
- ½ tbsp extra virgin olive oil
- ½ cup mayonnaise
- ½ tsp garlic powder
- 2 tsp lime juice
- ¼ tsp paprika
- ¼ tsp black pepper
Method
- Marinate the chicken breast with the taco seasoning and rub until evenly coated.
- Heat a large fry pan, add the olive oil and cook the chicken breast for 2 ½ minutes each side or until tender.
- Add in red capsicum and black beans and sauté for 3 minutes. Set aside.
- Microwave rice as per instructions.
- Combine all chipotle mayonnaise ingredients in a small bowl.
- To serve, place the rice in two bowls. Slice the chicken diagonally, then top with chipotle mayonnaise. Garnish with coriander and
