These cinnamon poached pears are soft, sweet and perfect for a light and healthy dessert, and still satisfy all your sweet cravings.
Ingredients
4 ripe pears, peeled, stalks intact
1 L water
3 tb maple syrup
2 cinnamon stalks
¼ cup orange zest
2 tb pistachios, finely chopped.
Cashew cream
½ cup raw cashews
3 Medjool dates, pitted
1 tsp vanilla bean paste or vanilla extract
¼ cup water
Method
Step 1: To prepare the cashew cream, place cashews in a bowl and cover with water and allow to soak for a minimum of 1 hour or overnight in the fridge. Once soaked, add the cashews with water, dates and vanilla extract to a high-speed blender and process until mixture is smooth. Set a side.
Step 2: To poach the pears, place a medium-sized saucepan over medium-high heat, add one litre of water, maple syrup and cinnamon stalks and bring to a gentle simmer. Gently add the pears and orange zest and bring water to a gentle boil, then reduce the heat to simmer poaching the pears for roughly 20 minutes – 1 hour, depending in how ripe your pears are.
Step 3: To serve, place one pear in a small bowl and add a dollop of cashew cream, then drizzle with sticky glaze and garnish with pistachios.
